- ½ teaspoon salt
- ½ cup (113g) unsalted butter, very cold and cubed
- 3–4 tablespoons ice water
For the Strawberry Peach Filling
- 3 medium ripe peaches, sliced
- 2 cups (300g) fresh strawberries, hulled and sliced
- ⅓ cup (65g) granulated sugar
- 2 tablespoons brown sugar
- 2 tablespoons cornstarch
- 1 tablespoon fresh lemon juice
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- ¼ teaspoon almond extract (optional)
For Assembly
- 1 large egg
- 1 tablespoon water
- 2 tablespoons coarse sugar
Optional Serving Toppings
- Vanilla ice cream
- Fresh whipped cream
- Honey drizzle
- Powdered sugar
Instructions
Step 1: Make the Pastry Dough
- In a large bowl, whisk together the flour, sugar, and salt.
- Add the cold butter cubes.
- Using a pastry cutter or your fingertips, work the butter into the flour until the mixture resembles coarse crumbs with pea-sized pieces of butter remaining.
- Add ice water one tablespoon at a time, mixing gently until the dough begins to come together.
- Form the dough into a disk.
- Wrap in plastic wrap and refrigerate for at least 1 hour.
Chilling helps create a flaky crust.
Step 2: Prepare the Fruit Filling
- In a large bowl, combine:
- Sliced peaches
- Strawberries
- Granulated sugar
- Brown sugar
- Cornstarch
- Lemon juice
- Vanilla extract
- Cinnamon
- Almond extract (if using)
- Toss gently until the fruit is evenly coated.
- Let the mixture sit for 10–15 minutes.
This allows the fruit to release some of its juices and develop flavor.
Step 3: Roll Out the Dough
- Preheat the oven to 400°F (200°C).
- Line a baking sheet with parchment paper.
- Remove the dough from the refrigerator.
- Roll it into a 12-inch circle on a lightly floured surface.
- Transfer the dough to the prepared baking sheet.
Do not worry if the circle is not perfect—the rustic shape is part of a galette’s charm.
Step 4: Fill the Galette
- Spoon the fruit mixture into the center of the dough.
- Leave about a 2-inch border around the edges.
- Avoid adding excess liquid from the bowl.
Step 5: Fold the Edges
- Gently fold the edges of the dough over the fruit filling.
- Pleat the dough as you work around the galette.
- The center of the filling should remain exposed.
Step 6: Apply Egg Wash
- Whisk together the egg and water.
- Brush the exposed pastry edges with the egg wash.
- Sprinkle the crust with coarse sugar.
This creates a beautifully golden and crisp crust.
Step 7: Bake
- Bake for 40–45 minutes.
- The crust should be deep golden brown.
- The fruit filling should be bubbling and thickened.
If the crust browns too quickly, loosely cover the edges with foil.
Step 8: Cool
- Remove from the oven.
- Allow the galette to cool for 20–30 minutes.
- The filling will continue to set as it cools.
Step 9: Serve
- Slice into wedges.
- Serve warm or at room temperature.
- Top with vanilla ice cream, whipped cream, or a light dusting of powdered sugar.
Expert Tips
Use Ripe Fruit
Ripe peaches and strawberries provide the best flavor and natural sweetness.
Keep the Butter Cold
Cold butter is essential for a flaky, tender crust.
Don’t Overfill
Too much fruit can cause excess juices to leak during baking.
Bake Until Deep Golden
A properly baked crust should be richly golden and crisp.
