  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon almond extract (optional)

  • 1 large egg
  • 1 tablespoon water
  • 2 tablespoons coarse sugar

Instructions

Step 1: Make the Pastry Dough

  1. In a large bowl, whisk together the flour, sugar, and salt.
  2. Add the cold butter cubes.
  3. Using a pastry cutter or your fingertips, work the butter into the flour until the mixture resembles coarse crumbs with pea-sized pieces of butter remaining.
  4. Add ice water one tablespoon at a time, mixing gently until the dough begins to come together.
  5. Form the dough into a disk.
  6. Wrap in plastic wrap and refrigerate for at least 1 hour.

Chilling helps create a flaky crust.


Step 2: Prepare the Fruit Filling

  1. In a large bowl, combine:
    • Sliced peaches
    • Strawberries
    • Granulated sugar
    • Brown sugar
    • Cornstarch
    • Lemon juice
    • Vanilla extract
    • Cinnamon
    • Almond extract (if using)
  2. Toss gently until the fruit is evenly coated.
  3. Let the mixture sit for 10–15 minutes.

This allows the fruit to release some of its juices and develop flavor.


Step 3: Roll Out the Dough

  1. Preheat the oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. Remove the dough from the refrigerator.
  4. Roll it into a 12-inch circle on a lightly floured surface.
  5. Transfer the dough to the prepared baking sheet.

Do not worry if the circle is not perfect—the rustic shape is part of a galette’s charm.


Step 4: Fill the Galette

  1. Spoon the fruit mixture into the center of the dough.
  2. Leave about a 2-inch border around the edges.
  3. Avoid adding excess liquid from the bowl.

Step 5: Fold the Edges

  1. Gently fold the edges of the dough over the fruit filling.
  2. Pleat the dough as you work around the galette.
  3. The center of the filling should remain exposed.

Step 6: Apply Egg Wash

  1. Whisk together the egg and water.
  2. Brush the exposed pastry edges with the egg wash.
  3. Sprinkle the crust with coarse sugar.

This creates a beautifully golden and crisp crust.


Step 7: Bake

  1. Bake for 40–45 minutes.
  2. The crust should be deep golden brown.
  3. The fruit filling should be bubbling and thickened.

If the crust browns too quickly, loosely cover the edges with foil.


Step 8: Cool

  1. Remove from the oven.
  2. Allow the galette to cool for 20–30 minutes.
  3. The filling will continue to set as it cools.

Step 9: Serve

  1. Slice into wedges.
  2. Serve warm or at room temperature.
