Ingredients

For the Cake

  • 8 ounces (225g) dark chocolate, finely chopped
  • ½ cup (115g) unsalted butter
  • ¾ cup (150g) granulated sugar
  • 4 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (85g) unsweetened shredded coconut
  • ¼ cup (25g) unsweetened cocoa powder
  • ¼ teaspoon salt

Optional Chocolate Ganache

  • ½ cup (120ml) heavy cream
  • 4 ounces (115g) dark chocolate, chopped

For Garnish

  • Toasted coconut flakes
  • Fresh raspberries or strawberries
  • Powdered sugar
  • Whipped cream

Instructions

Step 1: Prepare the Pan

Preheat your oven to 350°F (175°C).

Grease an 8-inch (20cm) round cake pan and line the bottom with parchment paper.

Step 2: Melt the Chocolate

Place the chopped chocolate and butter in a heatproof bowl.

Melt over a saucepan of simmering water (double boiler method), stirring until smooth.

Alternatively, microwave in 30-second intervals, stirring between each interval.

Allow the mixture to cool slightly.

Step 3: Mix the Wet Ingredients

In a large mixing bowl, whisk together:

  • Sugar
  • Eggs
  • Vanilla extract

Whisk until the mixture becomes slightly pale and smooth.

Slowly pour in the melted chocolate mixture while whisking continuously.

Step 4: Add the Dry Ingredients

Fold in:

  • Shredded coconut
  • Cocoa powder
  • Salt

Mix gently until fully combined and no dry spots remain.

The batter will be thick and glossy.

Step 5: Bake the Cake

Pour the batter into the prepared cake pan and smooth the top.

Bake for 30–35 minutes, or until the edges are set and the center is slightly soft.

A toothpick inserted near the center should come out with a few moist crumbs.

Step 6: Cool Completely

Remove the cake from the oven and allow it to cool in the pan for 15 minutes.

Transfer to a wire rack and cool completely before adding toppings.

The cake will continue to set as it cools.

Optional Chocolate Ganache

Step 1: Heat the Cream

Warm the heavy cream in a small saucepan until it begins to simmer.

Do not boil.

Step 2: Melt the Chocolate

Pour the hot cream over the chopped chocolate.

Let sit for 2 minutes, then stir until smooth and glossy.

Step 3: Decorate

Pour the ganache over the cooled cake and spread gently.

Allow it to drip naturally down the sides for a beautiful finish.
