Step 1: Preheat the Oven

Step 4: Cook the Pasta

While the feta mixture is baking, bring a large pot of water to a boil.

Add the salt and pasta.

Cook according to package instructions until al dente.

Before draining, reserve about 1 cup of pasta water.

Drain the pasta and set aside.

Remove the baking dish from the oven.

Using a large spoon or fork, mash the softened feta into the roasted tomatoes.

If the sauce appears too thick, gradually add a few tablespoons of reserved pasta water until you reach the desired consistency.

Add chopped fresh basil and stir again.

If needed, add more reserved pasta water to loosen the sauce and help it cling to the pasta.


Step 7: Finish and Serve

Sprinkle Parmesan cheese over the pasta if desired.

Garnish with additional basil leaves and freshly cracked black pepper.
