Ingredients

- 1 cup powdered sugar
- 2–3 tablespoons milk

Instructions
Step 1: Prepare the Oven
Preheat your oven to 350°F (175°C).
Grease and line a 9×5-inch loaf pan with parchment paper, leaving an overhang on the sides for easy removal.
Step 2: Mix the Dry Ingredients
In a medium bowl, whisk together:
- All-purpose flour
- Baking powder
- Baking soda
- Salt
- Ground ginger
- Ground cinnamon
- Ground cloves
- Ground nutmeg
- Allspice (if using)
Set aside.
Step 3: Cream the Butter and Sugars
In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar with an electric mixer for 3–4 minutes, until light and fluffy.
Add the eggs one at a time, beating well after each addition.
Mix in the vanilla extract.
Step 4: Add the Molasses
Slowly pour the molasses into the butter mixture while mixing on low speed.
Mix until smooth and fully incorporated.
Step 5: Combine the Batter
Add half of the dry ingredients to the wet mixture and mix gently.
Pour in the milk and hot water, mixing until combined.
Add the remaining dry ingredients and stir just until no dry streaks remain.
If using crystallized ginger, nuts, dried fruit, or white chocolate chips, gently fold them into the batter.
Avoid overmixing to ensure a tender loaf.
Step 6: Fill the Pan
Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Gently tap the pan on the counter a few times to remove any large air bubbles.
Step 7: Bake
Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
If the top begins to brown too quickly, loosely cover the loaf with aluminum foil during the final 15 minutes of baking.
Step 8: Cool
Allow the loaf to cool in the pan for 15 minutes.
Using the parchment paper, carefully lift the loaf onto a wire rack and let it cool completely before glazing or slicing.
Step 9: Prepare the Vanilla Glaze (Optional)
In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
Drizzle over the cooled loaf and allow the glaze to set for 10–15 minutes before slicing.
