Ingredients

For the Chicken

  • 4 boneless skinless chicken breasts or thighs
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 2 tbsp olive oil or butter

For the Onion Sauce

  • 3 large yellow onions, thinly sliced
  • 2 tbsp butter
  • 2 garlic cloves, minced
  • 1 tsp thyme (fresh or dried)
  • 1 tbsp flour (optional, for thicker sauce)
  • 1 cup beef broth or chicken broth
  • 1 tbsp Worcestershire sauce
  • ½ cup shredded Gruyère, Swiss, or mozzarella cheese

Optional:

  • Splash of white wine
  • Fresh parsley for garnish

Instructions

1. Season the Chicken

Pat chicken dry and season with salt, pepper, and garlic powder.

2. Sear the Chicken

Heat olive oil in a large skillet over medium-high heat. Cook chicken:

  • 4–5 minutes per side until golden
  • Remove and set aside (it will finish cooking later)

3. Caramelize the Onions

In the same pan, melt butter and add sliced onions. Cook slowly over medium-low heat for 20–30 minutes, stirring occasionally, until deeply golden and soft.

Add garlic and thyme during the last 2 minutes.

4. Build the Sauce

Sprinkle flour over onions if using. Stir well.

Pour in broth and Worcestershire sauce. Simmer 3–5 minutes until slightly thickened.

5. Finish the Chicken

Return chicken to the skillet. Spoon onions over the top.

Sprinkle cheese on each piece.

Cover with lid or place skillet under broiler for 2–3 minutes until cheese melts and bubbles.

6. Serve

Serve hot with mashed potatoes, rice, crusty bread, or roasted vegetables.

Take Time with the Onions

Slow caramelization is the key flavor builder. Don’t rush this step.

Use Gruyère if Possible

Gruyère melts beautifully and gives authentic French onion flavor.

Deglaze the Pan

A splash of broth or wine helps lift flavorful browned bits from the skillet.

Avoid Overcooking Chicken

Chicken breasts dry out quickly; use a thermometer if possible:

  • Safe internal temperature: 165°F (74°C)
